CAKE DECORATING & SUGAR ART CLASSES 2018

CLASSES:

  1. Classes are held in Ephrata Pa. (Lancaster County) Classes are small and personal and fill quickly, so book early. 

  2. There are several hotels, motels, Inns and B & B’S nearby.

  3.  All supplies and course materials are provided in each class.  Some tools and supplies will be offered for sale with student discounts on course day. 

  4. *A light lunch will be provided, when noted.

PAYMENT:

  1. VISA, MC and DISCOVER credit cards, and checks are accepted.  You may register on-line in the SAI store, or register directly with me on the phone.  

  2. Gift Certificates make great gifts we offer class gift certificates.  Gift certificates are non-refundable.

CANCELLATIONS:

  1. Class fees (less 10% administration fee) are refundable if class is cancelled within 14 days from class date.  No refunds apply within 14 days of class date.  No make-up classes are offered as the classes are seldom repeated, however, on discretion, we may offer an alternative class.

  2. Classes may be rescheduled due to inclement weather and will usually be scheduled for the same day/s the following week.

  3. Refunds will apply for enrolled students who are unable to attend on the new dates. 

  4. We will not be held responsible for airfares or hotel reservations paid, due to class cancellation or inclement weather rescheduling.

CLOSEST AIRPORTS

  1. Philadelphia International Airport - Take the train from the airport to Lancaster Train Station.  We will collect you from and return you to Lancaster train station.  This service is complimentary.

  2. Harrisburg International Airport - We will collect and return you from Harrisburg airport for a roundtrip $90.00 fee. 

  3. We will collect and return you daily to your hotel/motel within a 10mile radius from Ephrata.  This service is complimentary.

GENERAL INFORMATION:

  1. All supplies and tools are provided for every class.  Select tools and supplies will be on sale after each class.

  2. Please bring your own apron.  Classes are shown by category.  Find the class of interest, then check the dates. 

  3. Notes and hand-outs will be provided for each class, however, for in depth details we recommend taking step-by-step photographs.  Taking videos is not permitted

  4. As we are working with food products, please keep long hair tied back.  Disposable aprons are offered.

  5. Closed in shoes are recommended for students taking blown and pulled sugar courses.

  6. Some classes are duplicated on different dates.

  7. Registration is confirmed only on payment. 

  8. Payment plans are accepted providing class is paid in full two weeks prior to class date.  Call for assistance.

KID’S CLASSES:

  1. Parents may drop off and pick up children for class.  Pre-registration and consent forms must be completed when registering for the class. 

  2. Important: Please note the nuts and wheat may be used in the classes.

  3. Due to limited space, parents may not observe the class. 

  4. Parents wishing to stay with their children must pay the class fee to attend and participate.

  5. If parents are not picking up their children, a guardian must be approved by parents prior to class date and ID’s will be checked.  Your children’s safety is our utmost concern.

KIDS COOKIE CLASS: 8-12 years: $40.00

Saturday 1/06/18: 9:30am-12:00pm (2.5 hours)

This fun class is limited to 6 children. Children will learn to mix, roll, cut out and bake cookies. They will be taught to make royal icing, how to do easy-peasy piping to decorate their cookies. They will learn to work with piping bags and tips to do flood and simple piping. To make polka dots and pipe happy faces and to make fondant accents. Each child will make 6 cookies.

TEEN COOKIE CLASS: 13-16 years $40.00

Saturday 1/06/18: 1:30pm-4:00pm (2.5 hours

This fun class is limited to 6. Teens will learn to mix, roll, cut out & bake cookies. They will make royal icing. They will learn to use piping bags and piping a few basic piping techniques. They will also learn flooding techniques, and texturing in fondant to decorate their cookies. We will decorate 6 cookies.

GUM PASTE FLOWERS ROSE BOUQUET COURSE:

Roses are the favorite of all flowers for cakes. Beautifully made into a bouquet with Lily of the Valley and Freesia. This combination is perfect for adorning wedding cakes & celebration cakes. Tape flowers and foliage together into a bouquet. The Freesia is made using the “pulled” flower technique without using cutters.

COOKIES FOR SWEETHEARTS CLASS: (2.5 hours) $50.00

This cookie class is suitable for students with basic piping skills. Romantic cookies for Valentine’s Day. Make cookies for your beloved friends and family. Create romantic cookies with flooding techniques, texturing, wet-on-wet striping, molded and piped flowers, painting brush embroidery, delicate border piping and wood texturing. We will make 8 different styled cookies in this class.

CAKE DECORATING 101: THE BASIC “ESSENTIALS”

Having a good foundation is essential to cake decorating. Learn to trim, level and fill a cake. Make delicious Swiss Meringue Buttercream to ice your cake to a beautiful smooth finish and American Buttercream for piping and decorations. Learn to pipe unusual borders working with a variety of unique piping tips.

Choose your favorite border to pipe on your cake. Learn to design a variety of cake top designs, then create a top design adding some simply piped flowers. Learn the secrets to success for writing on a cake.

CAKE DECORATING 102: BEYOND THE BASICS INCLUDING FONDANT

This course will take your cake decorating to a new level. Learn to cover a cake with thin rolled fondant.

Learn a variety of fondant techniques including ruffling, striping, quilting, scrunching, draping and bows.

The photos show the techniques you will learn. We will not be making tiered wedding cakes.

This class covers a variety of delicious chocolate cookie recipes especially for Easter. Celebrate with some fun Easter designs. Easter Egg cookies using different piping tips for eye catching simple designs and drop flowers. Learn double-layered flooding, basket-weave, crimping and delicate fondant decorations. This class is suitable for students who have had basic piping experience. We will decorate 6 different cookie designs.

BRIDAL BOUQUET ON TEXTURED BIBLE or RUSTIC WORN-LEATHER BOOK:

Briar Roses, Stephanotis and Lilacs adorning a beautiful white bible or

old worn leather book. These book techniques can also be used for graduation cakes.

                                 Saturday 3/24/18 – 12:00pm-5:00pm

Briar roses are rustic roses, perfect for rustic themed barn weddings. The Stephanotis flowers represent marital harmony. The flowers are fragrant and are often found in bridal bouquets. Purple lilacs symbolize the first emotions of love. Together these flowers symbolize a romantic wedding cake adornment. Learn how to make a textured bible with gilded pages and an old, worn leather book.

CARVED CHOCOLATE EASTER-EGG CAKE & DAFFODIL FLOWER ARRANGEMENT:

Learn to make life-like beautiful tubular flowers, foxgloves and dainty daisies. These flowers look so elegant on cakes for a soft summary theme. Bring them to life by hand coloring and marking these edible creations. These flowers take a little more time to create and the outcome is well worth the work.

TIERED WEDDING CAKE COURSE:

FOR THE EXPERIENCED CAKE DECORATOR. 2-DAY CLASS (14 hours) $295.00

Learn to assemble cake layers for that “special” wedding cake. You will be taught more advanced techniques with advanced piping and fondant techniques. Create rustic designs to match fashionable barn themed weddings and design weddings cakes resembling the bride’s wedding gown.

Stack your cakes with strong supports guaranteed to hold firmly during transportation and delivery. Learn the very important do’s and don’ts of making, creating and delivering wedding cakes, avoiding pitfalls and disasters. You will design and create a 3-tiered wedding cake using the following techniques: Gilded embossing, billowing, crinoline gown effects, advanced draping with brush embroidery, wood and bark, beadwork piping with edible crystals, fabric roses, ribbon flowers and layered ruffles.

THE BUSINESS OF WEDDING & CELEBRATION CAKES:

Turning a hobby into a business: (2.5 hours) $50.00
Take your cakes to the next level, from hobbyist to professional, from freebies to selling! 

Monday 4/09/18: 10:00am-12:30pm 

                                    This course will teach you how to turn your cake hobby into a business, from the legalities, health department regulations to food  safety. You will learn how to consult with customers, design cakes, cost out and price cakes with the relevant artwork. Get samples of costing sheets, contracts, delivery forms, etc. Learn about production and timing and how to develop in-house systems that will keep you on track. Discuss the marketing and promotion of your business. And most importantly discuss the pitfalls and how to avoid them. I will share my knowledge from 30 years of experience, owning a catering business, reception facility and bakery.

We will decorate 6 different cookie designs.

GUM PASTE CYMBIDIUM AND CATTLEYA ORCHIDS Course:

This is a 2-class course – (5 hours) $95.00

FONDANT TEXTURING TECHNIQUES: (6 hours) $125.00

Texturing in fondant, gum paste and modeling chocolate. Learn how to make modeling chocolate. Once you know how to make these textures, you can apply them to a variety of cakes, e.g. Handbags, cupcake toppers, clothing, rustic cakes themes, etc.

ELEGANT SUGAR LACE AND STRIPED BOWS: (6 Hours) $120.00

Sugar lace, flexible, detailed and realistic, and so easy to make! Lace is a quick and easy way to decorate a cake with elegance and style. Sugar Lace can also be used to create striped bows and fabric for making baby clothing etc. In addition, learn to work with silicone molds to make the beautiful lace pieces.

This is another great class for beginners. Cookies for children, birthday themed cookies, sports cookies, flag cookies and more. Learn to transfer designs onto cookies and to create a variety of themed cookies including painted cookies. Combine royal icing and thin fondant to make a variety of textures and artistic designs. This class will teach you new techniques not covered in other cookie classes. We will decorate 8 different cookie designs.

Beginners 2 Day Beginners Class – (16 hours) $375

The oldest and most fascinating of all sugar arts. Learn to cook Isomalt so that it is crystal clear. This is an intensive 2-day class. Discover the art of casting contemporary styled supports; pulling to make flowers and striped ribbons and then blowing balls using a pump. The creations made will differ dependent on the season.

Please bring 2, 12”x12” boxes and Styrofoam popcorn to take your displays home.

CREATIVE CAKE CARVING COURSE: (6 Hours) $135.00

Carve and assemble a layered handbag cake. Decorate it with textured distressed leather and place it on a fondant parquet floor base. Carve your layered cake into a handbag shape. Ice and decorate with textured distressed leather fondant.Learn to make stitches, grommets, handles, buckles and tags to complete this cake design. Cover a cake board with fondant to replicate parquet flooring. Time allowing, we will add a gilded monogram.

Everyone loves safari wild life. Make this beautiful gum-paste Africa plaque and learn the to create backgrounds designs using edible paper. Build up your picture using cocoa butter and cocoa powder to give a textured and life-like cocoa painting: Lion, Buffalo, Rhino, Elephant and Leopard.

AUTUMN LEAVES AND ACORNS & COCOA PAINTING CLASS

Carve and assemble a layered handbag cake. Decorate it with textured distressed leather and place it on a fondant parquet floor base. Carve your layered cake into a handbag shape. Ice and decorate with textured distressed leather fondant. Learn to make stitches, grommets, handles, buckles and tags to complete this cake design. Cover a cake board with fondant to replicate parquet flooring. Time allowing, we will add a gilded monogram.

COOKIES FOR FALL

Tuesday 11/13/18: 6:00pm-8:30pm (2.5 hours) $50.00

This “all hands-on” class will teach you the important fundamentals of cookie decorating using techniques that can be used for any themed cookie. This class covers delicious cookie recipes, baking tips, mixing royal icing, including different consistencies for various techniques, easy piping, marbling, painted cookies, decorative accents, simple flowers and leaves for fall designs. These cookies have a long shelf life and/or may be frozen for Thanksgiving. We will decorate 6 different cookies in this class.

FONDANT TEXTURING TECHNIQUES: (6 Hours) $125.00

Texturing in fondant, gum paste and modeling chocolate. Learn how to make modeling chocolate. Once you know how to make these textures, you can apply them to a variety of cakes, e.g. Handbags, cupcake toppers, clothing, rustic cakes themes, etc.

Brick, Cobblestones, Stone-tiles, Wood-bark, Wood-grain, Basket-weave, Leather, Denim, Knitting, Giraffe-hide, Leopard-hide, Zebra-stripes, Cow-hide.

ELEGANT SUGAR LACE AND STRIPED BOWS: (6 Hours) $120.00

Sugar lace, flexible, detailed and realistic, and so easy to make! Lace is a quick and easy way to decorate a cake with elegance and style. Sugar Lace can also be used to create striped bows and fabric for making baby clothing etc. In addition, learn to work with silicone molds to make the beautiful lace pieces.

GUM PASTE FLOWERS ROSE BOUQUET COURSE

CLASS A & B combined: Saturday 11/10/18: 11:30pm-4:30pm (5 hours)

Roses are the favorite of all flowers for cakes. Beautifully made into a bouquet with Lily of the Valley and Freesia. This combination is perfect for adorning wedding cakes & celebration cakes. Tape flowers and foliage together into a bouquet. The Freesia is made using the “pulled” flower technique without using cutters.

CHRISTMAS/HOLIDAY COOKIES

Going from beyond the basics, learn more advanced decorating techniques. Have fun creating a variety of simple and eye catching designs to create 2D effects, texturing, stenciling, wet-on-wet, flooding build-up, piped dots and stripes. This class is exclusively for Christmas designs. These cookies have a long shelf life and/or may be frozen for Christmas. We will decorate 6 different cookies in this class.

GUM PASTE FLOWERS FOR CHRISTMAS/HOLIDAYS

Saturday 12/01/18: 10:00am-4.30pm (6.5 hours) $125.00

Christmas Gum Paste Flowers – Bouquet of Poinsettias, Holly Leaves and Berries and Blossoms. Make the leave, poinsettia petals and berries, pulled blossoms and learn how to arrange the flowers into a spray.
